Subnautica sets up a lot of stuff. It would be like watching terminator 2 before terminator 1. Still enjoyable but you will be missing a chunk of backstory.

Subnautica has its atmosphere, feel and biome variety over Below Zero, while Below Zero has better character showcasing, graphics/performance improvements, and extra UI/base pieces. I'd say Subnautica is better because it has the isolated feel to it, as well as an incredibly amazing story.
